Cuvée Carolle - rosé wine 2009

Bleeding winemaking process
Skin maceration
Thermo regulated fermentation
(low temperature)
The colour is a pale luminous rose shot with hints of blue.
The nose is fine, very delicate yet incisive.
Swirling releases the dominant fruity and flowery aromas (mandarin and blackcurrant flowers) with just a suggestion of liquorice.
The aromas are very complex.
On the palate the attack is lively with flavours of citrus fruits (blood orange) coupled with subtle hints of menthol.
The balance is excellent, good, rich, full-bodied and a long lively finish.
The aftertaste leaves hints of liquorice.
Can be drunk immediately as an aperitif or throughout a meal. The wine is robust with a complex bouquet and would easily accompany a bouillabaisse or a chicken curry prepared with citrus fruits.
