Cuvée Carolle - rosé wine 2008

Bleeding winemaking process
Skin maceration
Thermo regulated fermentation
(low temperature)
The colour is delicate pink shot with hints of blue and grey.
Medium intensity.
The nose is fine yet complex with citrus, mango and blackcurrant aromas to the fore together with the floral appeal of honeysuckle.
On the palate there is fullness and a powerful attack.
There are flavours of great complexity with red fruits, blackcurrants and raspberry predominating mingled with liquorice, brought together by a good carbonic maceration.
The finish is full, the fruit lingering, underlined with a fine acidity.
To be drunk as an aperitif and throughout a meal where its finesse and complexity are a perfect accompaniment to white meat and fish dishes.
